- Place cashews, yogurt, olive oil, vinegar and salt in a blender or food processor.
- Process until very creamy and smooth.
- With blender or food processor running, slowly add in xanthan gum and blend well.
- Refrigerate for an hour, or overnight, to allow to thicken.
- Use within a week.
