Vegan Sour Cream
Making a Vegan Sour Cream is very similar to making a Vegan Crème Fraîche. Both are tangy, creamy and delicious. This Sour Cream is perfect as a topping for tacos, to add a creamy flavor to soups, or to help create a delicious dip. The possibilities are endless!
INGREDIENTS
Prep Time: 5 minutes
Makes: about 2 cups
1 cup raw cashews, soaked in water overnight, drained
1-1/4 cup plain soy yogurt
2 tbsp olive oil
4 tsp apple cider vinegar
1 tsp sea salt
1/2 tsp xanthan gum
INSTRUCTIONS
Place cashews, yogurt, olive oil, vinegar and salt in a blender or food processor.
Process until very creamy and smooth.
With blender or food processor running, slowly add in xanthan gum and blend well.
Refrigerate for an hour, or overnight, to allow to thicken.
Use within a week.
