I love BabyCakes. Here is their amazing chocolate frosting. Sweet but not too sweet, creamy, chocolaty and delicious. :)

INGREDIENTS
*
adapted from: BabyCakes, from BabyCakes 2009

  • 1 ½ cups unsweetened soy milk or unsweetened coconut milk

  • ½ cup dry soy milk powder

  • ¼ cup unsweetened cocoa powder

  • 1 tbsp coconut flour

  • ¼ cup agave nectar

  • 1 tbsp pure vanilla extract

  • 1 cup coconut oil

  • 2 tbsp fresh lemon juice

  • 2 to 4 tbsp arrowroot powder

INSTRUCTIONS

  1. In a blender combine soy milk, soy powder, cocoa powder, coconut flour, agave nectar and vanilla. Blend the ingredients for 2 minutes.

  2. With the machine running, slowly add the oil and lemon juice, alternating between the two until both are fully incorporated. Pour the mixture into an airtight container and refrigerate for 6 hours or for up to 1 month.

  3. I find that the consistency of the frosting is more liquid than I’d like. So after the frosting has refrigerated for 6 hours, I will slowly add in arrowroot powder (one tbsp at a time, stirring frequently to incorporate) until it gets to the thickness I desire.
